A handcrafted Italian-style aged cheese made in Nova Scotia using a traditional family recipe and cheesemaking techniques passed down through generations. Roma Cheese founder Ciro Comencini follows the same recipe and methods learned from his grandfather and uncle in Italy. This firm, hard cheese has a rich, deep flavour with distinctive notes of fresh grass and flowers. Its character naturally changes with the seasons, giving each batch its own unique flavour and colour.
