Many customers notice that meat sometimes changes color during storage and wonder whether it is still fresh. The good news is that a change in color does not necessarily mean the meat has spoiled.

The Science Behind Meat Color

The color of meat is primarily determined by a natural protein called myoglobin. Myoglobin stores oxygen in muscle tissue and is responsible for the red color commonly associated with beef, lamb, and other red meats.

Different levels of oxygen exposure cause meat to appear in different shades:

  • Bright cherry red – when myoglobin is exposed to oxygen.
  • Dark red or purplish – when oxygen levels are low, such as in vacuum-sealed packaging.
  • Brown or darker shades – when myoglobin oxidizes over time.

Why Does Meat Become Darker?

One of the most common reasons is oxidation. As meat is stored, the myoglobin naturally reacts with oxygen, causing the surface color to darken. This is a normal process and does not automatically indicate spoilage.

Vacuum-packed meat may also appear darker than expected because it contains less oxygen. Once opened and exposed to air, the meat often returns to a brighter red color within a short period of time.

Does Darker Meat Mean It Is Unsafe?

Not necessarily.

Color alone is not a reliable indicator of freshness or food safety. Properly refrigerated meat can naturally darken while remaining perfectly safe to eat. Factors such as packaging, storage conditions, oxygen exposure, and the type of muscle all influence meat color.

Instead of relying only on color, check for:

  • An unpleasant odor
  • A slimy texture
  • Signs of improper storage

If none of these are present and the meat has been stored correctly, a darker color is usually a natural result of myoglobin changes.

Why Different Meats Have Different Colors

Not all meat contains the same amount of myoglobin. Beef and lamb generally contain higher levels, which is why they appear darker. Chicken breast contains much less myoglobin and therefore appears lighter in color.
